While peppermint is cultivated in many different parts of the world, quality can vary greatly. These days, most tea experts agree that the world's best peppermint is grown in the northwestern United States in the shadow of the majestic Rocky Mountains. The pure, moist air of spring and summer give the sweet herb an amazingly deep flavor. The second harvest during August typically provides the most flavorful leaf - cool in the mouth and pungent on the nose.

The sandy loam and nutrient deposits of the Nile Delta create perfect conditions for growing Camomile. The tiny blooms, with their yellow center and white petals, have been grown in the Delta for centuries. Over this time, thanks to the many trading and shipping routes that traversed the ancient world, people from all corners of the globe found countless uses for the flower. For example, the ancient Greeks used it like potpouri to freshen their homes. In other parts of Southern Europe, it was often sipped for relief of health problems ranging from toothache to nervousness. People as far away as China believed Camomile to have beneficial properties that allowed it to be a cure for headaches. Wherever it travelled, the flower's most common use was always as a soothing drink before bed. And it still is - Camomile's natural properties promote restfulness and good night's sleep. The primary growing region for this tea is Shizuoka prefecture south-west of Tokyo. Shizuoka is perhaps most famous outside of Japan as the home of Mount Fuji. Within Japan, however, the region is closely associated with high quality tea. The most commonly produced variety of tea manufactured in Shiuoka is Sencha. This grade is produced by steaming freshly plucked green tea leaves and rubbing them either by machine or by hand. The rubbed leaves are then pan-fired or basket-fired, which gives it its distinctive glossy, almost waxy, appearance. The cup has a superb light color, rich notes of mellow grass and hints of honey. It truly is a fabulous tea that we heartily recommend.

For millenia, white teas were so rare, they were reserved exclusively for the imperial courts of China. Gradually, however, production levels increased to the point where other Chinese could purchase white tea for special occasions only. Emperors still demanded, however, that not one tea leaf be permitted to leave the country, so great was its value. Subsequently, white teas were completely unknown outside of China until the mid 1890's, when for the first time in over a thousand years, the Chinese loosened their controls and got into the export business.
The reason for this act of tea benevolence came after 1885 when varietals of the tea bushes were isolated that allowed the growing and production of more specialty white tea, like this Pai Mu Tan. This allowed production to increase beyond that which could be could be consumed by the Chinese domestic market.
The full tea leaf ranges from pale green to silvery with lots of nice tips. Stark contrast between the tea leaves gives this tea very natural look that, in turn, gives way to a pure and natural cup of tea.
