Like all teas, Jasmine comes in many different grades.  This tea in particular is known in Fujian as Jasmine # 1.  It is a lovely green tea with surprising body and a captivating floral character.  It is made using tea and flowers harvested during the month of May when conditions are moist and somewhat cool overnight.  May production Fujian teas are noted worldwide for their fresh, full-bodied cup and their soft golden liquor.  The tea masters at The Metropolitan Tea Company decided to leave the dried flowers in the blend in to enhance the visual appeal.

The primary growing region for this tea is Shizuoka prefecture south-west of Tokyo.  Shizuoka is perhaps most famous outside of Japan as the home of Mount Fuji.  Within Japan, however, the region is closely associated with high quality tea.  The most commonly produced variety of tea manufactured in Shiuoka is Sencha.  This grade is produced by steaming freshly plucked green tea leaves and rubbing them either by machine or by hand.  The rubbed leaves are then pan-fired or basket-fired, which gives it its distinctive glossy, almost waxy, appearance.  The cup has a superb light color, rich notes of mellow grass and hints of honey.  It truly is a fabulous tea that we heartily recommend.

This blend of tea was originally created by the French Governor of Marrakesh at the height of the French Empire - hence the name, Le Marche.  He served the tea to foreign dignitaries who would love to visit his residence situated just as short walk from the Bazaar.  He loved the spice combination for its ability to cool the body down in the sultry Moroccan climate and for the way it blended with the sweet oranges for which the country is so famous.  Sadly for Monsieur le Gouveneur, the French lost their colonial seat in old Morocco.  Happily for the world in general, however, they left behind the recipe for this spicy blend of gourmet tea.
