Green tea is produced by forgoing the fermentation process required to produce black tea. Instead, the tea leaves are steamed as soon as they are plucked, then bruised by machine or by hand. The bruised tea leaves are pan-fired or basket-fired - a process that gives the tea its distinctive glossy look and feel. The primary growing region for this tea is Shizuoka prefecture south-west of Tokyo. Shizuoka is perhaps most famous outside of Japan as the home of Mount Fuji. Within Japan, however, the region is closely associated with high quality tea. The most commonly produced variety of tea manufactured in Shiuoka is Sencha. This grade is produced by steaming freshly plucked green tea leaves and rubbing them either by machine or by hand. The rubbed leaves are then pan-fired or basket-fired, which gives it its distinctive glossy, almost waxy, appearance. The cup has a superb light color, rich notes of mellow grass and hints of honey. This blend of tea was originally created by the French Governor of Marrakesh at the height of the French Empire - hence the name, Le Marche.
