Green tea is produced by forgoing the fermentation process required to produce black tea.  Instead, the tea leaves are steamed as soon as they are plucked, then bruised by machine or by hand.  The bruised tea leaves are pan-fired or basket-fired - a process that gives the tea its distinctive glossy look and feel.  The process also gives green teas, this Sencha in particular, a light, sweetish flavor - the perfect match for the fresh flavor of the Long Island strawberry.  We love it and think that you will too!

Chai is an integral part of Indian culture.  While riding the rails in India for example, the call of the chai wallah, "Chayee! Chayee!" can be heard at every stop.  It is not uncommon for the tea sellers to board trains in the middle of the night to wake passengers and sell their spicy concoctions.  Chai is served in small clay cups that, when drained, are thrown onto the tracks below.  The thick warm beverage is typically made with robust black teas, such as those produced in Assam.  Heavy milk is used to brew the tea, to which a multitude of spices is added.  From wallah to wallah recipes vary, but spice combinations generally include cardamom pods, cinnamon, ginger, cloves and pepper.  The cup produced is exceptionally full-bodied and incredibly soothing.
