This pasta sauce is the result of two very similar tastes, pinot noir wine and portobello mushrooms, being "married together" to create a truly unique flavor profile...
Often, when wine enthusiasts gather to assess fine wines, they will describe very good quality pinot noir wines as "having a barn-yard nose". (For those who are unfamiliar with such descriptions, this simply means that the wine has a very "earthy" aroma and bouquet. To wine enthusiasts, it is a sign that it has excellent varietal characteristics and that it is likely a very, very good wine.)
Portobello mushrooms have a similar, very distinct "earthy" aroma. They have a unique smell and taste that the French often describe as "le gout de terroir" (or, translated "the taste of the land".)
